SCHEDULE OF CLASSES 2008

We have put together the dynamic duo of Jim Tate, Chef of our Cooking School, and Daniel Franks, Wine Director at Chez Melange to give our guests interactive and food and wine classes.  Jim will be demonstrating different techniques and cuisines, and Daniel will be focusing on wine lingo, wine regions, and pairing wine with the food for the following evenings.

Wines will include: Gigondas, Vaqueyras, Dolcetto, Barbera, and California Grenache

Cooking Outside the Box

Spring is in the Air, Chef Jim will Explore the Use of Local, Seasonal, Sustainable and Organic Ingredients.  Dishes will Include Asparagus, Broccoli, Peas, Hummus, Cauliflower, Spinach, Cabbage, Blood Orange, Fennel, Rhubarb.

Daniel will be Matching wines such as Gruner Veltliner, Gewurztraminer, Pinot Noir, and Early Roses to compliment these budding and fresh ingredients.

How to Filet Fish.  Proper cooking techniques to approaching seafood.  Entertaining guests with sushi and sashimi, putting together a bento box for a healthy dinner.  The right sauce for the right fish.
